You haven't experienced the Andes if you haven't eaten an Apthapi. This activity is offered with the intent of showing guests one of the most prevalent traditions of the Andes: the custom of sharing food among the members of a community. 

An Apthapi is celebrated when the community gathers and every family brings their harvest to share. A large variety of potatoes, tubers, corn, cheese and fresh trout are served on a typical table cloth called aguayo.
